Greek Orzo a la Gazebo

Ingredients:

  • 1 Box Orzo Pasta
  • 1/2 C. Gazebo
  • 1/4 C. Calamata Olives, halved
  • 1/2 C. Sun Dried Tomatoes, Julienne
  • 2T. Fresh Greek Oregano
  • 1 T Shallots, chopped
  • 1 t. garlic, chopped
  • 3 T olive oil
  • Salt & Pepper to taste
  • Kasseri Cheese or Feta Cheese

Directions: Cook pasta according to pkg direcions. Saute shallots and garlic in olive oil for one minute. Add all other ingr., except oregano, dressing and cheese. Saute until hot. Add cooked pasta, toss to incorporate ingredients. Add Gazebo and oregano. Toss to coat and warm dressing. Season with S&P. (You might not need much salt.) Transfer to a large serving bowl and top with your choice of cheese. No cheese makes this a vegan dish.
